Welcome to Be Simply Vibrant

“I don’t want to be frumpy at fifty” Over the past few years, I started hearing this more often from some pretty amazing women in my life. I listened as they talked about struggles with their changing, aging bodies. I became not so blissfully aware: “crap, there’s no turning back, I’m closer to old than young!” I started to take a look at women around me. I saw women who were fighting aging, tooth and nail (and plastic surgery). I saw others who struggled with physical or emotional health. And I saw women who had accepted aging and were staying strong and sexy as they headed into that next phase of life. Real talk: If we’re lucky, we all age. You need to decide how you’re going to go d

Real Food Fuel: Blueberries, Peanut Butter on Whole Grain Toast

During blueberry season here in Ontario I enjoy as many little blues as I can! I love them for the taste for sure, but nutritionally speaking, these vibrant blue berries are a smart choice: They are packed with antioxidants, especially anthocyanins, that might boost brain health. One cup (250mL) has just 87 calories and 4 grams of fibre, making them an ideal snack, especially if you’re trying to manage a healthy weight. They are an excellent source of vitamin C, which is important for healthy gums (smile!) and skin as we age. For some real food fuel, try blueberries on top of a slice of whole grain rye toast slathered with natural peanut butter. It’s like jam, only a thousand times better! V

Generally speaking, here’s how much you fluid (not just water) you should aim for in a day: · Women: about 9 cups (2.2 L) · Men: about 13 cups (3 L) If you are highly active or sweat a lot, you may need to d

Mango, Asparagus and Radish Salsa

I usually grill or roast asparagus, but I was inspired to create this recipe after being on an asparagus farm culinary tour with (the amazing!) Foodies on Foot and Ontario Asparagus. Now when I’m grilling asparagus, I keep a few spears aside to make salsa. Chop your mango and veggies into bigger chunks to make it a salad. Enjoy! Ingredients 1 barely ripe mango, chopped 3 Ontario asparagus spears, sliced into small circles 3 Ontario radishes, finely chopped 1 tbsp diced red onion 3 tbsp chopped cilantro Juice of 1/2 lime (or more if you're like me and love lime!) 1 tbsp avocado or canola oil Pinch of coarsely ground sea salt How to Make: Mix all ingredients together in
