Simple Skillet Lasagna

With cold weather sneaking in, warm comfort food meals are on the menu. One of my family’s favourite comfort foods – lasagna – takes more time than I have on a weeknight. So, to solve my time crunch, I created a simple skillet version of this cheesy comfort food that you can make it HALF the time of the oven-baked variety. This is an easy, skillet lasagna that is perfect for weeknights since there’s no fussy layering of noodles and cheese. Just scatter noodles throughout the simmering sauce and add dollops of ricotta here and there. Sprinkle with cheese and broil 'till melt-y and golden. We round out our meal with a Quick Lemony Garlic-y Kale Salad that you can whip up in just a few minutes

Take a box of greens. Add a box of grape tomatoes. Drizzle dressing. Add cheese and toasted bread crumbs. What could be simpler?
