4 Ingredient Peanut Butter Cookies

I love natural peanut butter. Seriously love it. Like, eat it pretty much every day love it.

 

Beyond the delectable taste, natural peanut butter offers heart healthy fats, fibre, essential minerals and a bit of protein. And baked into cookies? Drool! What’s not to love?

 

This cookie is a little different from a usual peanut butter cookie in that it has no flour and less sugar. I know there are people out there who will be asking if it's "good for you". Hey, it's a cookie. It's tasty. It's not meant to replace a vegetable or fruit. It's just meant to be enjoyed (like all food). And that's OK!

 

With no flour though, it is gluten-free for my friends with celiac disease.

 

I like it without chocolate chips to be honest (gasp) but the other peanut butter lover in my house goes for chocolate. You decide what you love!

4 Ingredient Peanut Butter Cookies


Ingredients
1 cup (250 mL) natural smooth peanut butter *
¼ cup (60 mL) each brown sugar (unpacked) and white sugar **
1 egg
1 tsp (5 mL) vanilla
Optional: ½ cup chocolate chips

How to Make:
Pre-heat oven to 350F. Line a baking sheet with parchment paper.


Blend peanut butter and sugars in a mixer until well-combined, about 1 minute. Add in egg and vanilla and mix well. Stir in chocolate chips (if using).

 

Using a teaspoon measure, scoop out dough, roll into balls and place on prepared baking sheet. Flatten slightly with the back of a fork.

 

Bake for 10 to 12 minutes. Cool completely before moving or biting – they will be crumbly otherwise.

* If your natural peanut butter is salt free, consider adding a smidge of salt (1/4 teaspoon) to the batter or sprinkling cookies with a flakey salt just before you pop them into the oven. It makes the world of difference in the taste department.

** you can use all brown sugar for an even softer cookie and you can try it with less sugar if you like to experiment.
